Roasted Sweet Potatoes with Honey and Cinnamon

Ingredients
4 Sweet potatoes (peeled and cut into 1 inch cubes)
1/4 cup Olive oil
Plus a bit more for serving
1/4 cup Honey
Salt & pepper to taste
2 teaspoons Cinnamon

Step by Step Instructions
  1. Preheat oven to 375. Lay the sweet potato cubes put in an even layer on a roasting tray.
  2. Drizzle the cubes with oil, honey, salt, pepper, and cinnamon.
  3. Roast for 25 to 30 minutes, then remove the cubes and drizzle them with a bit more oil before serving.
